When we discovered vegan margarine it was like opening up a whole new world to us with things (especially cookies) that we could eat once again that tasted REALLY GOOD!

This recipe is made in one bowl and no chilling time is required for the dough so these cookies can be ready fast. We have tried using coconut oil as a substitute but it does change the texture of the cookies. No one would guess these cookies are dairy free, and we have tried other dairy free cookie recipes that aren’t so great.

Dairy Free Double Chocolate Chip Cookies Ingredients:

Makes about 2 dozen

1 1/4 cups vegan margarine (or butter substitute)

1 cup sugar

2 eggs

2 tsp vanilla

2 cups flour

3/4 cup cocoa

1 tsp baking soda

1/2 tsp salt

2 cups chocolate chips(dark chocolate or dairy free choice of your liking)

Instructions

Preheat the oven to 350 F. Line your baking pans (cookie sheets) with parchment paper. Cream together vegan margarine and sugar. Add the eggs and vanilla and mix to combine.

In a separate bowl mix the flour, cocoa, baking soda and salt. Add the flour mixture and chocolate chips to the egg mixture just until combined. Drop by spoonfuls onto cookie sheet. Or make into balls (a small ice cream scooper works great for this) about one heaping tablespoon in size.

Once cookie dough balls are on the cookie sheet, flatten them down a bit with the back of a spoon. Bake for 8-9 minutes. The cookies are very soft when they first come out of the oven. They will firm up as they cool. Let cool 10 minutes and enjoy!

Freezer Tips:

These cookies freeze well either as cookie dough or already baked cookies. Baked cookies are great straight from the freezer.

To freeze the cookie dough, simply roll the cookie dough into balls and freeze in a freezer friendly container. When you want to bake cookies simply preheat the oven and bake, adding a few more minutes since the dough was frozen. No need to defrost the dough.
