The definition of biscotti are twice-baked cookies that originated in Italy, which are often considered not as sweet as traditional cookies. Biscotti are specifically designed to be dunked in a mug of hot coffee,tea or hot chocolate or originally, Vin Santo (Italian Dessert Wine).
How to Make Biscotti
Biscotti are baked twice, which gives them their dry, crunchy texture. The dough is first shaped into a log and baked. After the baked dough log cools, you slice it on the diagonal and bake the cookies a second time until they are crisp.
What is the history of Biscotti?
There is a common misunderstanding that biscotti originated in the Tuscan region of Italy, when in reality it was created a few centuries earlier in Rome. The word biscotto is derived from the Latin word ‘bis’ for ‘twice’ and ‘coctum’ or ‘baked’ which would soon be adapted to ‘cotto’ meaning ‘cooked’.
The first round in the oven was used to cook the dough, and the second round dried and preserved the biscotti, providing an extraordinarily long shelf life for nourishment during the Roman Legions’ extended journeys and conquests.
How long do biscotti keep?
If you store biscotti in an airtight container at room temperature they will keep for at least two weeks. Biscotti may also be frozen in an airtight container for several months.
