Looking for a healthy smoothie recipe? This colorful blueberry kale smoothie recipe is packed with two superfoods: kale and wild blueberries, sweetened with apple and honey, and with the added health benefits of flax seed or coconut oil and tastes delicious.

The antioxidant king, wild blueberries have two times more antioxidants than even ordinary blueberries. And they’re full of anthocyanins, which give them their deep purplish color and have been shown to fight inflammation in humans.

Kale is one of the most nutrient-dense foods on the planet, and together, these make a delicious super powered food. I grow kale in my garden every summer, freeze it, and use it in this smoothie all winter long. This recipe makes a healthy and delicious addition to your meal planning for the week.

This dark purple blueberry kale smoothie is so great for getting greens into your kids (as well as yourself), especially the reluctant ones who don’t like green veggies. One could even call this a green smoothie recipe but disguised with the addition of blueberries. When the ingredients are blended well with a blender, you won’t see any green, and this smoothie is sweet! Kid approved! It’s pretty much the blueberry flavour you taste.

Note: I use wild blueberries as opposed to cultivated blueberries as the nutritional component sky rockets in the wild blueberries. The wild blueberry has less water and is therefore smaller, but has more flavour. It has 2x the antioxidants of the cultivated ones. Also, I found that when I used the cultivated blueberries, the smoothie would thicken and gel more than with the wild blueberries. You can find both kinds at most grocery stores.

Blueberry Kale Smoothie Ingredients

1 apple

1 1/2 cups frozen kale

1 cup frozen wild blueberries

1/2 cup water

1 Tbsp honey

1 Tbsp flax seed oil or coconut oil

Serves 1.
