Baked Italian Turkey Meatballs

Baked Italian Turkey meatballs are a favorite in our home and this recipe is easy to make and freezes well. These meatballs are great on their own or also taste delicious with noodles or rice topped with your favorite sauce. This recipe makes a healthy and delicious addition to your meal planning for the week.

The most time consuming part of making meatballs is rolling them into even little balls. Using a medium sized cookie scoop to evenly portion out the turkey mixture, followed by a quick roll between my hands helps speed up the process nicely.

Ingredients:

  • 1/2 red or white onion, chopped
  • 2 large size eggs
  • 3/4 c bread crumbs ( I make my own – just put a slice of day old bread in a food processor and process until crumb consistency)
  • 1 Tbsp Italian (or Italiano) seasoning
  • 1/2 tsp dried oregano
  • 1 Lb ground turkey (use lean ground Turkey, not extra lean)
  • 1 tsp garlic powder
  • Pinch of salt and pepper
  • Optional – parsley for garnish

Using lean ground Turkey rather than extra lean makes the meatballs more moist with that little extra bit of fat in the meat.

To Freeze: After baking, let the meatballs cool to almost room temperature. Place on a cookie tray and cover loosely with plastic wrap. Freeze for 2 hours. Transfer the partially frozen meatballs to a freezer safe gallon zip lock bag. Freeze for up to 3 months. Thaw overnight in the refrigerator or warm them straight from the freezer in the microwave at 50% power till heated through. Enjoy in your favorite dishes.
