Best Ever Spring Toast

Have you thought of enjoying the flavours of spring? Here’s a simple delicious best ever spring toast recipe that has the flavours of spring – fresh alfalfa sprouts, crispy radishes, crunchy cucumber and creamy guacamole with the tanginess of Dijon and mayo that will leave you feeling satisfied. This recipe makes a healthy and delicious addition to your meal planning for the week.

This makes a delicious healthy breakfast or lunch and to add protein you could add a poached or fried egg on top. To make it even simpler, you could use store bought quacamole or use my easy quacamole recipe below.

Best Ever Spring Toast

Ingredients:

Serves 1. Prep time 10 minutes.

Guacamole:
  • 1/4 c mashed ripe avacodo
  • 1 Tbsp finely diced tomato
  • 1/2 tsp finely chopped white onion
  • Salt and pepper to taste

Stir to combine the above.

For the rest of the toast:
  • 1 tsp mayonnaise
  • 1 tsp Dijon mustard
  • 1/4 c Alfalfa sprouts
  • 1 small radish, washed and thinly sliced
  • Cucumber, thinly sliced
  • Salt and pepper to taste
  • 1 slice of bread of your choice

Instructions:

Toast your bread. Spread the mayonnaise and Dijon mustard evenly over the toast. Add the quacamole, alfalfa sprouts, radish and cucumber. Sprinkle with salt and pepper and enjoy!
