This spring toast is fresh and light and tasty! I love the Springtime combination of flavours; you can find radishes and alfalfa sprouts readily available at the grocery store or market. Toasts are so versatile; you can mix and match different toppings based on the season. This recipe makes a healthy and delicious addition to your meal planning for the week.

This makes a delicious healthy breakfast or lunch and to add protein you could add a poached or fried egg on top. To make it even simpler, you could use store bought quacamole or use my easy guacamole recipe below.

Best Ever Spring Toast


Serves 1. Prep time 10 minutes.

  • 1/4 c mashed ripe avacodo
  • 1 Tbsp finely diced tomato
  • 1/2 tsp finely chopped white onion
  • Salt and pepper to taste

Stir to combine the above.

For the rest of the toast:
  • 1 tsp mayonnaise
  • 1 tsp Dijon mustard
  • 1/4 c Alfalfa sprouts
  • 1 small radish, washed and thinly sliced
  • Cucumber, thinly sliced
  • Salt and pepper to taste
  • 1 slice of bread of your choice


Toast your choice of bread. Spread the mayonnaise and Dijon mustard evenly over the toast. Add the quacamole, alfalfa sprouts, radish and cucumber. Sprinkle with salt and pepper and enjoy!
