Favorite add-ins to granola
Once the granola is baked, cooled and ready to eat, we like to add a variety of add-ins to complete this amazing breakfast. We add dried fruit such as raisins, cranberries or apricots (and sometimes all three together).
We’ll add nuts such as walnuts, pecans, cashews or peanuts. We’ll add fresh fruit such as bananas, pears, strawberries, blueberries or pretty much anything we have on hand.
Then we top it all with apple sauce, yogurt or stewed rhubarb (or all three together) and what an amazing, delicious breakfast or healthy satisfying snack!

Ingredients for Healthy Homemade Granola
8 cups rolled oats (organic is best)
2 cups shredded unsweetened coconut
1 tsp salt
1 cup olive oil
1 cup liquid honey(unpasteurized is best)
1 Tbsp vanilla

Instructions
1. Preheat your oven to 350F and line two cookie sheets with parchment paper.
2. Mix the dry ingredients together. Add the olive oil, honey and vanilla to the dry ingredients and mix well.
3. With the lined cookie sheets, divide the granola in half evenly spreading one half across each pan.

4. Bake at 350 F for 5 minutes, in the middle of the oven, stir and then bake another 7 minutes. The granola should be lightly golden brown on top. Carefully remove the granola from the pans into a big bowl to cool.
I just lift up the parchment paper with the granola on it and carefully place it over the bowl and let the granola slide off. The granola will be soft at first and gets crunchy as it cools.
I remove it from the cookie sheets as soon as it comes out of the oven or it will stick to the parchment paper.
Stir occasionally as it cools to keep from sticking together. Let cool completely and then enjoy! Add your choice of favorite toppings or enjoy just as it is.
