If you grow your own tomatoes and have a surplus, or bought more than you need, there are a variety of ways to preserve your tomatoes either through freezing , canning, or dehydrating. I have made preserved fresh tomato salsa through canning and fresh tomato sauces and soups through freezing and all turn out very well. I have dehydrated fresh tomatoes and used them in recipes that turned out great.
